Pear-Ginger Light Ice Cream

Of all the fruits, pears seem hardest to catch just at their peak of ripeness and taste. Consequently, I turned to always perfect canned pears to make this great flavor. Fresh ginger adds a delightful, unexpected kick.

Makes about 1 quart

2 (16-ounce) cans sliced Bartlett pears in heavy syrup, drained, or 3 cups peeled and sliced ripe pears (6 to 8 fresh pears)

¾ cup sugar

1 tablespoon fresh lemon juice

1¼ teaspoons grated fresh ginger

2 cups half-and-half or light cream
